This is one of my all-time most interesting and favorite recipes. Yes, it’s really made with Coke. What’s cool about the cola is that the carbonation tenderizes the meat while it’s cooking, and the cola taste is particularly excellent. The recipe is super-fast to make with only a few easily accessible ingredients, it’s made with vegetables (healthy!) and you can have a cold drink of cola while preparing this yummy roast!

Ingredients

Main ingredients

  • 3 – 3 and 1/2 pound beef roast

  • 2 cups Coca Cola

  • 2/3 cup orange juice

  • 1 pound baby carrots

  • 3 stalks celery, sliced lengthwise and cut into 3 inch pieces (or more, if you like)

  • 2/3 cup Heaven & Earth Ketchup

  • 1/4 cup onion soup mix

Directions

Prepare the Coca Cola Roast

1.

Place a rack into the EPC pot. Place the roaste on top of the rack.

2.

Pour the Coca Cola and orange juice over the roast.

3.

Carefully arrange the vegetables around the roast.

4.

Pour the ketchup ovet the roaste and vegetables, then sprinkle the onion soup mix over the roast/vegetables.

5.

Lock the lid and close the pressure valve. Cook for 55 minutes using manual high pressure mode.

6.

Naturally release the pressure for 30 minutes, then manually release the pressure.

7.

Remove the roast. Wait 10 minutes, then thinly slice the roast. Place the slices in a roasting pan or casserole. Top with the vegetables and pan juices. Serve hot or cold.

Tips:

  -The easiest way to cut a roast is to place it in the refrigerator, preferably overnight, then slice the roast while it’s very cold. -I use natural consommè and onion soup mixes without msg or unhealthy additives for extra flavor.
