In this kosher for Passover recipe, London broil beef cuts are rubbed with a simple coffee, cocoa, and spice blend, then slathered in barbecue sauce and cooked quickly over high heat.
1 tablespoon Haddar Instant Coffee granules
1 tablespoon light brown sugar
1 tablespoon sweet paprika
1 teaspoon chili powder (or to taste)
1 teaspoon Haddar Kosher Salt
1/4 teaspoon black pepper
1 teaspoon Gefen Garlic Powder
1 teaspoon Gefen Onion Powder
1 teaspoon dried oregano
1 teaspoon unsweetened cocoa powder
2 London broils (each about 2 pounds/1.8 kilograms)
2/3 cup Gefen BBQ Sauce (try Rorie’s low-carb low-sugar BBQ sauce to keep this recipe low in sugar)
Combine ingredients for spice rub in a large resealable bag.
Add meat to the bag and rub on all sides with spice rub. Marinate in the refrigerator for at least one hour or up to 24 hours.
Remove meat from refrigerator and let stand while preheating broiler or grill. If broiling, spray broiling pan with nonstick cooking spray and line bottom tray with foil.
Transfer meat to prepared pan; spread barbecue sauce over the top. Broil or grill for eight to 10 minutes per side or until meat reaches desired doneness. (For medium, cook to 145 degrees Fahrenheit.)
Let meat rest for five minutes. Slice against the grain, on the diagonal, into thin slices. Transfer to a serving platter. Serve hot or cold.
