I love the taste of coffee and I was thinking that adding this together with smoked paprika would give my shoulder roast a bold taste.
1 4-lb shoulder roast
2 Tbsp olive oil, divided
1 large onion, sliced
1 Tbsp instant coffee, dissolved in a cup and half of water
1 Tbsp black pepper
1 Tbsp salt
2 Tbsp smoked paprika
1 Tbsp paprika
7 frozen garlic cubes
Preheat oven to 250 F.
Heat 1 Tbsp oil in a frying pan. Add onions and sauté until golden. Lower the fire and add diluted coffee and let it simmer for 5 minutes. Remove from heat and set aside.
Mix all the spices in a bowl. Rub 1 Tbsp oil on the roast. Smear the spice mixture all over the roast making sure to cover it entirely.
Heat up a grill pan and sear both sides of the roast for 3 minutes on each side. Remove from pan and place in a 9×13 pan. Smear the garlic cubes over the roast. Pour the onion mixture on top of the roast.
Cover and bake for 2 hours. (For a well done roast, bake for longer).
