The carbs contained in potatoes are rapidly absorbed leading to weight gain. These creamed lima beans are a great substitute.
In a four-quart pot, cover lima beans with two inches water.
Bring to a boil, then cook one hour or until soft.
Sauté onion and garlic in oil. Add beans and salt.
Blend with immersion blender.
In a pot, melt margarine.
Add rest of ingredients. stir and bring to a boil. Whisk until smooth.
Drizzle over mashed lima beans.
