Briny pickled herring with creamy mayo, sour pickles, and sweet carrots.
1 pint pickled herring with onions
1 medium carrot, finely grated
1 Haddar Cucumber in Brine or other large pickle, diced
2 tablespoons Gefen Mayonnaise
Drain herring liquid and remove bones and skin. Chop herring and onion slices. Add pickles, mayonnaise, and half of grated carrots. Mix.
Sprinkle remaining carrots for decoration.
