Creamy Herring Salad with Pickles and Carrots

Main ingredients

  • 1 pint pickled herring with onions

  • 1 medium carrot, finely grated

  • 1 Haddar Cucumber in Brine or other large pickle, diced

Directions

Prepare the Salad

1.

Drain herring liquid and remove bones and skin. Chop herring and onion slices. Add pickles, mayonnaise, and half of grated carrots. Mix.

2.

Sprinkle remaining carrots for decoration.

Notes:

Will keep for 1 week in the refrigerator.

Variation:

Add 1 can tuna and 2 hard-boiled eggs, mashed.
