Diets 2 pounds of salmon fillet with skin on (8 fillets)
salt
pepper
1 and 1/4 cups almond meal
1 packet Lipton Onion Soup and Dip Mix
4 tablespoons Gefen Mayonnaise
3 tablespoons water
juice of 1 lemonĀ (or aboutĀ 3 tablespoons Heaven & Earth Lemon Juice)
2 tablespoons olive oil
1 medium orange
Preheat oven to 400 degrees Fahrenheit.
Place the almond meal and Lipton soup packet in a food processor, and pulse two to three times. Add mayo, water, lemon, and oil and blend until it forms a paste (about 10 seconds).
Place salmon on a baking sheet and season with salt and pepper. Brush salmon with almond paste mixture. Drizzle a little more olive oil over fillets.
Bake for 20 minutes, until salmon is cooked through.
Squeeze the orange over the salmon.
