Diets 1/2 cup Shibolim White Whole Wheat Flour (or the flour of your choice)
1/2 cup Gefen Light Mayonnaise
2 teaspoons lemon juice
1 teaspoon Glicks Soy Sauce
1/2 teaspoon garlic powder
dash of cayenne pepper
1 cup Gefen Cornflake Crumbs
1 teaspoon oregano
1 teaspoon dry parsley
1/2 teaspoon salt
3 to 4 barramundi fillets, cubed
nonstick cooking spray, such as Glicks Cooking Spray
1 cup light sour cream
2 and 1/2 tablespoons dried chives
1 and 1/2 tablespoons lemon juice
1/2 teaspoon salt
dash of ground white pepper
Preheat oven to 375 degrees Fahrenheit.
Prepare three shallow bowls. Place flour in the first bowl.
In the second bowl, combine mayonnaise, lemon juice, soy sauce, garlic powder, and cayenne.
In the third bowl, combine cornflake crumbs, oregano, parsley, and salt.
Dip each piece of fish first in the flour, then in the mayonnaise mixture, and then in the seasoned cornflake crumbs.
Line a baking sheet with Gefen Parchment Paper and spray with nonstick cooking spray. Place fish on the sheet and spray lightly with cooking spray. Bake 15 minutes.
In a small bowl, combine sour cream, chives, lemon juice, salt, and white pepper.
Serve fish bites warm or at room temperature alongside the sauce.

What other types of fish can be used if barramundi is not available?
Any white fish would work.
