Diets Zucchini is great on the grill any way you slice it (literally), but this method gives maximum searing surface, plus a great presentation.
3–4 zucchini, sliced lengthwise
2 tablespoons Tuscanini Olive Oil
2 tablespoons fresh lemon juice or Tuscanini Lemon Juice
1 teaspoon salt
1/2 teaspoon Pereg Paprika
1/2 teaspoon garlic
1/4 teaspoon pepper
Slice zucchini halves about halfway through, creating a diamond pattern.
Drizzle with olive oil and lemon juice and sprinkle with spices.
Grill cut side down for approximately five minutes or until crispy.
