Easy and simple, this cucumber salad comes out great every time. Taking just minutes to prepare, this light and refreshing cucumber salad can be prepared in advance. A wonderful, delicious salad to complement any meal.
12 pounds kirbies (approximately 48 medium)
3-4 large Italian peppers, thinly sliced
2 red peppers, thinly sliced (optional)
7-8 small onions, thinly sliced
3 cups sugar
3 tablespoons salt
3/4 teaspoon Pereg Pepper
2 tablespoons pickling spice, wrapped in cloth (optional)
2 and 1/2 cups vinegar
Peel kirbies, leaving strips of peel. Slice thinly.
Place all ingredients in a container, cover, and let stand for one and a half hours.
Mix thoroughly and refrigerate for a day. Discard pickling spice and serve.
