Cucumber Salad (Big-Batch)

Ingredients

Cucumber Salad

  • 12 pounds kirbies (approximately 48 medium)

  • 3-4 large Italian peppers, thinly sliced

  • 2 red peppers, thinly sliced (optional)

  • 7-8 small onions, thinly sliced

  • 3 cups sugar

  • 3 tablespoons salt

  • 3/4 teaspoon Pereg Pepper

  • 2 tablespoons pickling spice, wrapped in cloth (optional)

  • 2 and 1/2 cups vinegar

Directions

Prepare the Cucumber Salad

1.

Peel kirbies, leaving strips of peel. Slice thinly.

2.

Place all ingredients in a container, cover, and let stand for one and a half hours.

3.

Mix thoroughly and refrigerate for a day. Discard pickling spice and serve.
