Diets Delicious muffins! They don’t even taste diet. As one of my friends said, “They taste heavenly!”
Yield: 12 mini muffins
1 and 1/2 cups whole wheat flour
1 cup oats
3/8 cup brown sugar
1 tablespoon oil
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon Gefen Vanilla
1 egg
1 cup orange juice
1/2 cup blueberries
Mix everything, except blueberries, together till well blended. Then gently add in the blueberries.
Spray muffin pan/tin. Add batter into the muffin tin (I use one tablespoon in each well for mini muffins).
Bake at 350 degrees Fahrenheit for 25 minutes.
