Ingredients

Diet Blueberry Muffins

  • 1 and 1/2 cups whole wheat flour

  • 1 cup oats

  • 3/8 cup brown sugar

  • 1 tablespoon oil

  • 1/2 teaspoon baking soda

  • 2 teaspoons baking powder

  • 1 teaspoon Gefen Vanilla

  • 1 egg

  • 1 cup orange juice

  • 1/2 cup blueberries

Directions

1.

Mix everything, except blueberries, together till well blended. Then gently add in the blueberries.

Spray muffin pan/tin. Add batter into the muffin tin (I use one tablespoon in each well for mini muffins).

3.

Bake at 350 degrees Fahrenheit for 25 minutes.

Notes:

Store in an airtight container in the refrigerator for four to five days. Can be frozen up to three months.
