  • black pepper, to taste

Directions

Prepare the Kugel

1.

Preheat oven to 350 degrees. Place the bag of broccoli in a microwave oven and cook on high for seven to ten minutes or until tender.

2.

Using a food processor equipped with a large-hole grater blade, grate cooked broccoli and squash. Set aside in a large mixing bowl.

3.

Place knife blade in food processor and beat eggs, milk, salt, and pepper. Add to mixing bowl and combine well with vegetables by hand.

4.

Pour mixture into lined 9- x 13-inch pan and bake for 45 minutes or until browned.

It kind of looks like zucchini to me. But I asked the recipe content supervisor. I will see what she says.

The consensus is that it’s zucchini. Considering it’s a diet kugel, that makes the most sense.
