Easy and Healthy breaded chicken cutlets (gluten free)


Delicious breaded chicken packed with flavor and healthy ingredients. Using almond flour and avocado oil based mayonnaise to coat it makes it more filling. The mayonnaise keeps the chicken moist and spraying with a little oil before baking gives it a nice crispy outside.



1. Trim and cut chicken cutlets to preferred size.
2. Place in a bag with mayonnaise and shake until fully coated. Combine almond flour and spices in a large plate or bowl. Coat chicken pieces in almond flour mixture and place on a parchment paper lined baking sheet. Once all pieces are on the baking sheet, spray with avocado oil or evoo and place in a preheated oven at 400 degrees for 15 minutes.
3. Note: I make a big batch of the almond flour mixture and keep it in my freezer.
4. This can also be used on chicken legs.
