1. Trim and cut chicken cutlets to preferred size.
2. Place in a bag with mayonnaise and shake until fully coated. Combine almond flour and spices in a large plate or bowl. Coat chicken pieces in almond flour mixture and place on a parchment paper lined baking sheet. Once all pieces are on the baking sheet, spray with avocado oil or evoo and place in a preheated oven at 400 degrees for 15 minutes.
3. Note: I make a big batch of the almond flour mixture and keep it in my freezer.
4. This can also be used on chicken legs.
