1. Combine oil, honey and peanut butter in a medium bowl and mix until smooth. Add remaining ingredients and mix until combined.
2. Using a small scooper, form into balls and place on cookie sheets lined with Gefen Parchment Paper. Refrigerate until firm.
3. For extra crunch, melt baking chocolate and dip the bites into it. Roll in chopped pretzels and return to fridge until chocolate hardens.
