Try this delicious salad for a refreshing, healthful side dish that makes a beautiful presentation. It’s a wonderful alternative to coleslaw for those who are ready to try something new.
1 red onion
1 medium-size jicama, peeled just before using
3 carrots
1 cup orange juice
zest of 1 small orange
3 tablespoons vinegar
Cut onion into quarters and soak in salted hot water for one hour. Drain well.
Coarsely grate jicama, onion and carrot.
Mix all ingredients together. Voila! You have a yummy salad.
