We are all guilty of sneaking a couple chicken dinosaurs and baby carrots as we prep the big people’s food. Not this time! Make only one meal, something your kids will love as much as you do: a big platter of flavorful chicken poppers (reminiscent of simple sesame shnitzelonim, but with more oomph), lots of kid-sized chopped veggies, and the perfect dipping sauce. Put out some ketchup for the littles as a back-up, and gather round for a fun family dinner.
2 eggs
3 tablespoons sesame seeds
3 tablespoons poppy seeds
2 tablespoons black sesame seeds
2 tablespoons onion flakes
1 tablespoon garlic granules or garlic powder
1 and 1/2 teaspoons sea salt flakes or coarse salt
2 pounds (1 kilo) chicken breast, cut in cubes
canola oil, for frying
1/8 cup Haddar Dijon Mustard or yellow mustard, no seeds
1/8 cup Gefen Honey
1 teaspoon apple cider vinegar
1/2 teaspoon paprika
ketchup
barbecue sauce
thousand island
Place two shallow plates or dishes on your work surface. In the first, whisk eggs.
In the second, mix breadcrumbs, sesame seeds, poppy seeds, black sesame seeds, onion flakes, garlic powder, and salt.
Working with a few pieces at a time, coat chicken in the eggs and then in the seasoned breadcrumbs.
In a pan, heat about two inches of oil. Taking care not to crowd the pan, fry chicken pieces until golden, two to three minutes. Flip and fry the second side. Transfer to a plate lined with a paper towel and set aside.
In a small bowl, combine mustard, honey, vinegar, and paprika.
On a big platter, arrange poppers and vegetables. Add a bowl of the prepared honey mustard sauce. If desired, add little containers of ketchup, barbecue sauce, Thousand Island, mustard, and/or garlic mayo.
