I was looking for a combination of fruits that would complement each other well and offer a change of pace from the typical fruit salad. Well, this superb medley does just that: great flavor, refreshing, and addictive! Make sure to use ripe fruit, since that makes a big difference in the salad's sweetness.

Prepare the Salad
-
Peel all fruit and remove pits or seeds as necessary.
-
Dice pineapple, mangoes, kiwis, and papaya into small cubes.
-
Slice bananas into circles, if using.
-
Place all fruit in a large bowl and add half a cup orange juice. Mix gently until juice is distributed evenly. If desired, add additional juice.
Prepare the Topping
-
Combine coconut, sugar, and oil in a small frying pan. Over medium heat, toast for three minutes, stirring constantly, until fragrant and beginning to brown. Allow to cool. Sprinkle over individual portions of salad.
Note:
This topping is very similar to Baker’s Choice Nut Crunch — make extra because it’s great over many different desserts!
