Diets I was looking for a combination of fruits that would complement each other well and offer a change of pace from the typical fruit salad. Well, this superb medley does just that: great flavor, refreshing, and addictive! Make sure to use ripe fruit, since that makes a big difference in the salad’s sweetness.
1 medium pineapple
3 medium to large mangoes
4 large kiwis
1 small Maradol papaya
2 bananas (optional)
1/2 – 1 cup orange juice
1 cup flaked coconut
1/4 cup sugar
1 tablespoon oil
Peel all fruit and remove pits or seeds as necessary.
Dice pineapple, mangoes, kiwis, and papaya into small cubes.
Slice bananas into circles, if using.
Place all fruit in a large bowl and add half a cup orange juice. Mix gently until juice is distributed evenly. If desired, add additional juice.
Combine coconut, sugar, and oil in a small frying pan. Over medium heat, toast for three minutes, stirring constantly, until fragrant and beginning to brown. Allow to cool. Sprinkle over individual portions of salad.
