Ferrero Rocher is a well-known Italian chocolate confection. Each ball of Ferrero Rocher is made of a whole toasted hazelnut, wrapped in a hazelnut cream-filled wafer and coated in a layer of milk chocolate, bittersweet chocolate, and hazelnut flakes. In this version, wafer rolls replace the hazelnut flakes and give the truffles a crispy, crunchy coating. Yield: 20 balls
18 ounces wafer rolls with hazelnut filling (Tonnelli makes a dairy version)
1 cup plus 1 tablespoon unsalted toasted hazelnuts, finely ground
2/3 cup hazelnut or praline paste
20 whole hazelnuts, unsalted and toasted
2/3 cup unsalted, toasted hazelnuts, coarsely chopped
10 ounces wafer rolls (Tonnelli makes a dairy version)
15 ounces Elite Bittersweet Chocolate
1/4 cup canola oil
Grind wafer rolls into fine crumbs. Mix with ground hazelnuts and paste until combined. Refrigerate one hour.
Roll the mixture into 20 balls. Insert a whole hazelnut into each ball and close securely. Roll each ball in chopped hazelnuts. Place on a tray and refrigerate.
Grind wafer rolls into coarse crumbs and place on a plate. Melt chocolate in a double boiler and transfer to a plate. Add oil to chocolate and mix.
Remove balls from refrigerator and dip each ball into chocolate. Immediately roll in wafer crumbs to coat fully.
