A divine, melt-in-your-mouth twist on pizza. I have tested this out on the pickiest of eaters and got the thumbs up. It’s simple to prepare, but is so pretty to serve.
Flatbread Pizza (Pizza Bred or Trader Joe’s)
3/4 – 1 jar fig preserves (I use Bonne Maman)
8-oz log of goat cheese
Arugula
1 pomegranate
2 bosc pears
Spread a thin layer of fig preserves over flatbread. Places thin slices of goat cheese in rows over the preserves.
Bake at 350 for 15-20 minutes or till top of pizza is lightly browned. Remove from oven and let pizza cool for about 5 minutes.
Sprinkle arugula and pomegranate seeds over pizza. You can thinly slice pears and place on pizza before sprinkling pomegranate seeds or serve them as garnish.
