If you don’t use processed dairy or potato starch on Pesach, I’ve still got you covered! Bananas contain natural starch and create a creamy base, so they work perfectly as a dairy and starch substitute.
Yield: 4–5
2 bananas
4 eggs
oil, such as Gefen Cottonseed Oil, for frying
For best results, use an immersion blender to purée the bananas. Alternatively, mash them well by hand.
Add the eggs and use a fork or a whisk to combine well.
Heat oil in a frying pan over medium heat. Add scoops of batter to make pancakes of your desired size and fry until golden, about one minute per side.
