Fluffy Banana Pancakes for Pesach

Ingredients

Fluffy Banana Pancakes

  • 2 bananas

  • 4 eggs

Directions

For best results, use an immersion blender to purée the bananas. Alternatively, mash them well by hand.

Add the eggs and use a fork or a whisk to combine well.

Heat oil in a frying pan over medium heat. Add scoops of batter to make pancakes of your desired size and fry until golden, about one minute per side.

Notes:

If you don’t feel like having pancakes, you can make either of these pancake recipes as waffles or crepes!

Waffles: Add the batter (from either of the above recipes) to a waffle maker and cook according to the manufacturer’s instructions.

Crepes: Heat one tablespoon oil in a frying pan over medium heat. Cover the bottom of the pan in a very thin layer of batter (from your favorite recipe above) and cook for one minute on the first side and just a few seconds on the second side.

Ready to serve? Top with melted chocolate, homemade hazelnut cream, yogurt, fresh fruit, and/or nuts.

Bonus idea: If you’re pulling out bananas for the fluffy banana pancakes, take a few extra bananas and let your kids make this tasty and fun Pesach snack: Slice bananas into thick rounds, stick toothpicks or popsicle sticks into them, and dip in sugar, melted chocolate, coffee grounds, or finely chopped nuts. Freeze them, and you’ve got mini “ice cream” bites.
