Cheesy Pancakes

  • 1 (250-gram/8.5-ounce) container quark cheese (see note)

  • 2 eggs

  • 3 tablespoons Gefen Potato Starch

Directions

nechama_fink

1.

In a bowl, mix together the quark cheese, eggs, potato starch, and sugar until smooth (you can do this by hand).

2.

Heat oil in a frying pan over medium heat. Add small scoops of batter to make cheese latkes and big scoops of batter to make pancakes. Fry for one minute per side, until golden.

Notes:

For those of you in Israel, quark cheese is 5% gevinah levanah. Can’t find quark cheese? Sub with cottage cheese.

It’s a type of cheese spread. It’s like a mix of greek yogurt + cream cheese or sour cream.

Cottage cheese is a different texture; I’d use something smoother.
