It was one of those afternoons, where I had 10 minutes (at most!) to put together a supper if I wanted it to be ready on time so the rest of my evening could go smoothly… as I was scanning the contents of my pantry and freezer, I came up with this novel idea!!! My kids couldn’t agree more. It was finished to the last drop and is a frequently requested supper in my house. It’s really kid-friendly, and at this point really “Mom-Friendly” too!!
1 16-oz bag rice (I usually use minute rice, as it takes that much faster to cook, but any type of rice is perfect. Just adjust the cooking times accordingly)
1 pkg frankfurters (any type you’d like, according to your family’s tastes!)
salt, to taste
onion soup mix
boiling hot water
Spray pan, pour in the rice, drizzle over olive oil and salt and onion soup mix. Slice the franks into thin slices and put on top of the rice. Pour the boiling water to cover with at least an inch of extra water on top of the rice. Cover tightly and cook, check after 45 minutes.
