Diets Another super-easy side from the Nitra Cookbook. Fried rice with zucchini or celery is so simple to pull together and can accompany any meat or poultry main dish.
1 green pepper, thinly sliced
2 zucchini, sliced in 1- and- 1/2-inch diagonal strips, or 3 stalks celery, chopped
2 tablespoons oil
1 and 1/2 cups rice
3 cups water
1/2 teaspoon salt
In four-quart saucepan, stir-fry pepper and zucchini in oil over high heat until limp.
Add rice, stirring frequently until browned.
Add water and salt.
Simmer until all liquid is absorbed.

Freeze? Does it freeze well?
yes
Cooked rice? Do I cook the rice before i add it to the pan?
No. You stir-fry the raw rice in the oil, together with the vegetables, then you add the water and cook till done.
