Another super-easy side from the Nitra Cookbook. Fried rice with zucchini or celery is so simple to pull together and can accompany any meat or poultry main dish.
1 green pepper, thinly sliced
2 zucchini, sliced in 1- and- 1/2-inch diagonal strips, or 3 stalks celery, chopped
2 tablespoons oil
1 and 1/2 cups rice
3 cups water
1/2 teaspoon salt
In four-quart saucepan, stir-fry pepper and zucchini in oil over high heat until limp.
Add rice, stirring frequently until browned.
Add water and salt.
Simmer until all liquid is absorbed.

Cooked rice? Do I cook the rice before i add it to the pan?
No. You stir-fry the raw rice in the oil, together with the vegetables, then you add the water and cook till done.
