Diets These sauteed zucchini and carrots are the easiest side dish to prepare and goes along with pretty much any main dish of meat, chicken or fish.
1 onion, diced
3 tablespoons oil
2 carrots, peeled and shredded
4 medium zucchinis
1 teaspoon salt
Sauté onion in oil for five minutes.
Add carrots, sauté for 25-30 minutes or until tender.
Cut squash in half lengthwise, slice to 1/4 inch thickness. Add to carrots.
Cook covered over low heat for 15 minutes.
Add salt, mix well.
Serve with meat or fish.
