Fruity Cake with Crumbly Topping

Ingredients

Cake

  • 3 eggs

  • 1 cup sugar

  • 1/2 cup oil

  • 1 cup seltzer

  • pinch of salt

Filling

  • 2 cups fruit of your choice, diced (apples, pears, berries, etc.)

Crumb Topping

  • 1/2 cup sugar

  • 3/4 cup flour

  • 1/4 teaspoon cinnamon

  • 1/3 cup ground oats or chopped nuts

  • 1/4 cup oil

Directions

Prepare the Cake

1.

Preheat oven to 325 degrees Fahrenheit. In a bowl, beat eggs and sugar for two minutes. While mixing, add remaining batter ingredients and mix until batter is smooth. Do not overmix.

2.

Divide batter into two greased loaf pans. Scatter fruit on top of batter. 

3.

Mix all topping ingredients together until crumbly. Sprinkle on top of fruit.

4.

Bake for 35-45 minutes, until cake layer is firm.

I used 2 English loaf pans, and mixture spilt over, should have used 3 I guess

frozen berries does it change timing? should i thaw 1st?

Nope, it won’t change the timing and I wouldn’t thaw them first, I would use them frozen.

Seltzer substitute? I normally do not use seltzer water. Can I substitute it for another liquid?

Hi! You can also mix in 1 tablespoon of lemon juice in 1 cup of bottled water for every cup of sparkling water called for in the recipe.

Teaspoon or tablespoon? Is it really 1.5 tablespoons baking powder?

Hi- yes the 1.5 tablespoons of baking powder is correct. Also- the crumb topping should have 1/4 cup of oil in it. We are correcting the recipe now. Thanks!

streusel topping I made this cake yesterday with blueberry pie filling. a real hit! BUT I also think oil or margarine is missing from the streusel topping. Temi, would you please let us know how much to add of the oil/marg.? Thank you.

We are so happy to hear that you enjoyed this dessert. I would add 3 Tablespoons of oil or margarine to start with and keep adding until it becomes the right crumble consistency.

@brawn88 @Anniehglopak I would recommend using an “English Cake” pan https://www.walmart.com/ip/Hanamal-Baking-Paper-Loaf-Pans-English-cake-11-x-3-5-x-2-Inches-Pack-of-24/138315672
But I’m sure it could be made in a different size pan as well.

Can I make this in a 9 inch square pan? or some other pan rather than a loaf pan?

Yes, I don’t see why not. You just don’t want something too big but a 9-inch square or circular pan should be fine. You may have to adjust the timing, so I would start off with less time and slowly increase it.
