It’s hard to find healthy, filling snacks that are nut free to send to school. I simply leave out the pecans if these are going in a lunch box. With all these amazingly healthy ingredients, I’m happy when I can send one to school for a snack. It’s certainly better than onion rings, right?

Start Cooking

Prepare Muffins

  1. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).

  2. Mix all the muffin ingredients together in a large bowl (do not overmix).

  3. Spoon into lined muffin tin.

  4. Combine topping ingredients in a separate bowl and scatter generously over muffins.

  5. Bake for 25 minutes.

Variation:

Raisins can be substituted for the chocolate chips.
