  1. Preheat oven to 375 degrees Fahrenheit. 

  2. Arrange cleaned chicken in 9x13-inch baking dish, skin-side up. Sprinkle with garlic cloves and celery. Combine wine, oil, lemon juice, parsley, basil, salt, and pepper. Pour over chicken. Sprinkle lemon rind on top. 

  3. Bake, covered, for 1 hour. Uncover and bake 15 minutes or until chicken is tender.


Two heads of garlic may seem like a lot; don’t be tempted to use less as it gives the chicken a delicious flavor.
