1 whole chicken, cut up and cleaned
2 large heads of garlic, separated into cloves
3 stalks celery, cut into 1-inch pieces
3/4 cup Baron Herzog Chenin Blanc or other dry white wine
1/4 cup Gefen Olive Oil
3 tablespoons fresh lemon juice
2 tablespoons chopped parsley
2 tablespoons chopped fresh basil or 3/4 teaspoon Gefen dried
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes, optional
1/2 teaspoon grated lemon rind
Preheat oven to 375 degrees Fahrenheit.
Arrange cleaned chicken in 9×13-inch baking dish, skin-side up. Sprinkle with garlic cloves and celery. Combine wine, oil, lemon juice, parsley, basil, salt, and pepper. Pour over chicken. Sprinkle lemon rind on top.
Bake, covered, for 1 hour. Uncover and bake 15 minutes or until chicken is tender.
