  • 1 whole chicken, cut up and cleaned

  • 2 large heads of garlic, separated into cloves

  • 3 stalks celery, cut into 1-inch pieces

  • 3/4 cup Baron Herzog Chenin Blanc or other dry white wine

  • 1/4 cup Gefen Olive Oil

  • 3 tablespoons fresh lemon juice

  • 2 tablespoons chopped parsley

  • 2 tablespoons chopped fresh basil or 3/4 teaspoon Gefen dried

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon crushed red pepper flakes, optional

  • 1/2 teaspoon grated lemon rind

Directions

To Prepare

Preheat oven to 375 degrees Fahrenheit.

Arrange cleaned chicken in 9×13-inch baking dish, skin-side up. Sprinkle with garlic cloves and celery. Combine wine, oil, lemon juice, parsley, basil, salt, and pepper. Pour over chicken. Sprinkle lemon rind on top.

Bake, covered, for 1 hour. Uncover and bake 15 minutes or until chicken is tender.

Notes:

Two heads of garlic may seem like a lot; don’t be tempted to use less as it gives the chicken a delicious flavor.
