For years, I was looking for an oatmeal cookie that tasted like an oatmeal cookie should- yummy, cinnamon-y and wholesome. Most oatmeal cookie recipes were just glorified chocolate chip cookies with some oats thrown in. Finally after much searching and some tweaking, this margarine-free, yummy recipe was born. Anyone who tastes it, asks for the recipe. Hope you enjoy 🙂

Ingredients

Main ingredients

  • 1 and 1/2 cups flour (can use white whole wheat)

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 3/4 teaspoon salt

  • 1 teaspoon cinnamon

  • 1/2 cup sugar

  • 1 cup lite brown sugar

  • 1 and 1/2 cups old fashioned oats (not quick oats)

  • 3/4 cup oil

  • 2 eggs

  • 1 teaspoon vanilla

  • optional but recommended addition- white chocolate chips

Directions

Prepare the Oatmeal Cookies

1.

Preheat oven to 350 degrees Fahrenheit.

Combine all dry ingredients in a big mixing bowl.

3.

Make a well and add oil, eggs, vanilla.

4.

Mix well and add chocolate chips.

5.

Make equal-sized balls (size depends on how big you like your cookies).

6.

Bake 12-15 minutes.
