Diets Yields 1 chocolate bar
1 dragon fruit
1 mango
3 kiwis
5 ounces good-quality dark chocolate such as Elite, melted
Slice the dragon fruit, mango and kiwis into quarter-inch slices. Use a small cookie cutter to cut shapes from the fruit.
Line a loaf pan with Gefen Parchment Paper so that it overhangs on each side. Coat with a bit of cooking spray so that it peels off easily.
Spread melted chocolate evenly on the bottom of the pan. Arrange prepared fruit in your desired pattern.
Refrigerate for 30 minutes or until chocolate is completely set. Use the baking paper to lift the chocolate bar out of the pan. Peel off parchment paper and serve immediately, or wrap in foil and refrigerate for up to 24 hours.
