This is an easy, moist, delicious cake that tastes exactly like an amaretto cake without the amaretto. The key is to beat all the ingredients for a full 2 minutes and it gets much fluffier.
6 eggs
2 cups sugar
1/2 cup oil
2 cups flour
3 tsp baking powder
1 tsp vanilla sugar
3/4 cup orange juice
1 cup confectionary sugar
1 tsp oil
1 tsp hot water (More if too thick. If watery. add more confectioners’ sugar)
Pour all ingredients into a mixing bowl and mix for a full 2 minutes. Pour into bundt pan or long loaf pan (I used one that perfectly fits the size of a long lucite tray). Bake approx 50 minutes.
When cool pour on glaze and sprinkles or colored sugar on top if desired. Let glaze drip down the sides a little for a pretty look.
