A decadent take on the Gin Fizz. Gin Fizzes were especially popular in the 1940s – so much so that some bars had to hire extra bartenders to handle all the shaking.
Highball glass
lemon slices
25 milliliters/1 ounce freshly squeezed lemon juice
1 egg white
50 milliliters/1 and 2/3 ounces gin
1 teaspoon white sugar (or 15 milliliters/1/2 ounce sugar syrup)
champagne, to top
Fill a cocktail shaker with ice cubes and add the lemon juice, egg white, gin and sugar. Shake vigorously, then strain into a highball glass filled with ice.
Top with Champagne and garnish with lemon slices. Serve immediately.
