Glazed Sweet Potatoes

The glaze on these sweet potatoes really elevate the humble sweet potato into something very special. Sticky, sweet, and soft, they make a great side dish and add gorgeous color to your meal!

Ingredients

Sweet Potatoes

  • 2 and 1/2 pounds sweet potatoes, 7-8 medium, unpeeled

  • 1/2 cup brown sugar

  • 2 ounces margarine

  • 1/4 cup orange juice

Directions

Prepare the Sweet Potatoes

1.

Cook sweet potatoes in water until tender.

Peel and cut into half-inch slices. Place onto cookie sheet.

3.

In a large skillet, mix remaining ingredients. Cook over medium heat for half an hour. Pour over sweet potatoes.

4.

Bake at 450 degrees Fahrenheit for 15 minutes.

Notes:

This recipe can be prepared ahead of time. Refrigerate after cooking and bake prior to serving.
