Diets The glaze on these sweet potatoes really elevate the humble sweet potato into something very special. Sticky, sweet, and soft, they make a great side dish and add gorgeous color to your meal!
2 and 1/2 pounds sweet potatoes, 7-8 medium, unpeeled
1/2 cup brown sugar
2 ounces margarine
1/4 cup orange juice
3 tablespoons water
1/2 teaspoon Gefen Cinnamon
1/2 teaspoon salt
Cook sweet potatoes in water until tender.
Peel and cut into half-inch slices. Place onto cookie sheet.
In a large skillet, mix remaining ingredients. Cook over medium heat for half an hour. Pour over sweet potatoes.
Bake at 450 degrees Fahrenheit for 15 minutes.
