Diets I love how light these muffins are, and how much more wholesome they are thanks to the almond flour.
Yields 12 muffins
3 very ripe bananas
3 large eggs
1 teaspoon Gefen Pure Vanilla Extract
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup Heaven & Earth Coconut Sugar (or sweetener of your choice)
3 cups Gefen Almond Flour
1/4 cup Haddar Mini Chocolate Chips
1/2 cup quick oats
1/4 cup flour, such as Gefen Almond Flour
3 tablespoons sugar
2 tablespoons vanilla sugar
2 tablespoons oil
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a muffin pan with paper liners and set aside.
Using a stick blender, blend bananas, eggs, vanilla, cinnamon, baking soda, baking powder, salt, and coconut sugar and process until smooth.
Add almond flour and process just enough to combine. Fold in chocolate chips.
Drop spoonfuls of batter into the prepared muffin pan. If using the topping (omit for Pesach, of course), combine the topping ingredients and sprinkle the mixture over the batter in each muffin cup. Bake for 25–30 minutes, or until golden brown and a toothpick inserted come out clean.
