The fluffiest and most flavorful gluten-free pancakes you will ever eat.
1 and 1/4 cups almond flour
3 eggs
1/4 cup almond milk
2 Tablespoons coconut oil
2 Tablespoons honey or maple syrup
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon ACV
Pinch of salt
Place all ingredients in high-speed blender and blend until smooth. Set aside.
Heat a lightly oiled frying pan over medium-low heat. (Low and slow is the key to getting these pancakes fluffy.) Pour or scoop the batter into the frying pan, using approximately 2-3 tablespoons per pancake. Brown on each side and serve hot.
