My mother loves to snack on corn nuts. She even mentioned that she’s tossed them into a salad on occasion and maybe I should try it out…. Well, mothers are always right!! I tried it out and loved the crunch it added to this awesome salad. This one’s for you, Ema!
1 (8-ounce/227-gram) bag romaine lettuce
1/3 pound dried, hard salami, thinly sliced in circles
1 red onion, sliced thinly
1 avocado, cubed
1 cup barbecue corn nuts (or a spicy flavor)
1 cup grape tomatoes, sliced in half
1 tablespoon Gefen Minced Onion
1/2 cup oil, such as Gefen Canola Oil
1/2 cup sugar
1/4 cup Tuscanini Apple Cider Vinegar
2 teaspoons Gefen Yellow Mustard
1 teaspoon salt
1/2 teaspoon garlic powder
Blend all dressing ingredients together.
Neatly layer salad ingredients in a large bowl.
Pour dressing over salad and toss well.

Real good salad made it with homemade jerky instead of salami and really delish
