These mocha chocolate muffins are so rich with flavor and delicious but are packed with nutritious ingredients, and they won’t spike your blood sugar! Plus, they’re gluten free and refined sugar free, making them the perfect mid-morning snack.

Ingredients

Mocha Chocolate Muffins

  • 1/2 cup (120 grams) butter, melted

  • 3 eggs

  • 1 teaspoon Gefen Vanilla Extract

  • 2/3 cup strongly brewed coffee or espresso

  • 1/3 cup sugar-free chocolate chips or dark chocolate bar chopped up into chunks

Directions

1.

Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.

2.

Mix almond flour, coconut flour, coconut sugar, cocoa powder, baking powder, and salt in a bowl.

3.

Add melted butter, eggs, vanilla, coffee, and mix.

4.

Stir in chocolate chips.

5.

Bake for 25 minutes or until cooked through.
