What about if it’s supposed to be your night off from cooking and it’s pizza night for the kids–but the grownups still want a healthy meal? With this dinner, you can still eat well without too much time or effort.
1 and 1/2 pounds sweet potato or butternut squash fries
salt, for sprinkling
black pepper, for sprinkling
smoked paprika, for sprinkling
1 pound skinless salmon fillet or cubes
salt, for sprinkling
black pepper, for sprinkling
juice of 1/2 lemon
2 cups prepared brown rice
1 5-ounce container baby spinach
1 ripe avocado, sliced
1 cup Gefen Lite Mayonnaise
6-7 cubes Gefen Frozen Basil
4 cubes Gefen Frozen Parsley
1/4 teaspoon dried dill
1-2 tablespoons Kedem White Wine Vinegar
1 teaspoon salt
pinch black pepper
Preheat oven to 425 degrees Fahrenheit. On one side of a greased baking sheet, toss sweet potato or butternut squash fries with salt, pepper, and smoked paprika. Spray with cooking spray and bake for 20-25 minutes.
Place salmon on another baking sheet. Season with salt, pepper, and a squeeze of lemon. Bake cubes for 10 minutes or fillets for about 20 minutes.
Prepare the green dressing. Combine all ingredients.
Assemble the bowl. In different sections, arrange rice, sweet potatoes, avocado, spinach, and salmon, alternating green and orange colors. Drizzle with green dressing.
