This is a very simple recipe that can be prepared ahead of time. It’s light, fresh, and perfect for a summertime meal!

Ingredients

Salad

  • 4 cups fresh string beans, halved

  • 3 scallions, sliced

  • 1/2 red bell pepper, sliced

Dressing

Directions

In a bowl, whisk dressing ingredients together until well combined.

Steam string beans for three to five minutes until bright green but still crunchy, then toss with dressing. Add scallions and bell pepper and mix. Refrigerate until ready to serve.
