Delicious and easy, grilled or pan-fried chicken breasts with bright mango salsa is a fresh option for your Passover meal plan.
Sprinkle salt, pepper and one tablespoon of olive oil over the chicken fillets. Let them marinate in the fridge for 30 minutes.
Heat up a grill pan and grill the chicken fillets until browned on both sides.
Meanwhile, prepare the salsa by mixing the mango, red onion, cilantro, lemon juice, and two tablespoons of olive oil, salt and pepper to taste.
Serve the chicken fillets with the mango and red onion salsa on top.
