Easy Grilled Chicken with Asian Barbecue Sauce

These remind me of a favorite chicken we used to order in a restaurant that closed down years ago. They are saucy and sticky, with just a bit of heat.

Ingredients

  • 2 tablespoons rice vinegar

  • 1/8 teaspoon red pepper flakes

  • 3-4 scallions, thinly sliced

Directions

Prepare Chicken

1.

Preheat grill to medium-high heat.

2.

Rub the drumsticks lightly with oil to avoid sticking to the grates.

3.

Place the drumsticks on the grill and cover. Let cook for about 20 minutes, turning once or twice during cook time.

If there are flare-ups, try to move the chicken to a different part of the grill.

5.

Meanwhile, combine the ketchup, soy sauce, rice vinegar, and red pepper flakes in a bowl and mix well.

6.

Brush cooked chicken liberally with sauce immediately after removing chicken from grill.

7.

Sprinkle with scallions and let sit for five minutes before serving.

All the directions should be the same, however, you might need to adjust the cooking time of the chicken.

It can, but the taste that grilling tastes will be missing. But the sauce is great, nonetheless.

Apricot jam missing The recipe does not list apricot jam in the ingredient list but it is mentioned in the instructions. How much apricot jam should I use?
