Diets As much as I appreciate some good fleish at a barbecue, a refreshing salad adds a really nice balance to a heavy meal. So for all you salad lovers out there, I’ve got your back. This salad is refreshing and also packed with that barbecue flavor you usually only get from meats.
1 lemon, sliced in half and grilled
3 to 5 red chili peppers, grilled
1 ear of corn, such as Beleaves Frozen Corn, grilled
1 avocado, sliced into large wedges
Using a knife, remove corn from the cob, slicing it off from top to bottom.
Layer all the rest of the ingredients on a bed of your favorite leafy greens.
For dressing, squeeze half a lemon onto the salad (make sure to catch all the seeds!), drizzle with extra-virgin olive oil and season with salt and pepper. (Alternatively, use any dressing of choice.)
Toss and enjoy!
