If you’ve never tried grilled peaches, you must. They are deliciously good. I knew I must include them in one of my cocktails. Don’t be intimidated by the amount of steps this recipe entails; they don’t take too long and the result is worth every bit of effort.
1 peach, halved
2 and 1/2 tablespoons Manischewitz Honey
7 sprigs thyme
2 tablespoons hot water
juice of 1/2 lemon (or about 1 and 1/2 tablespoons Gefen Lemon Juice)
1 (12-ounce) bottle ginger beer (such as Reed’s)
2-3 ounces Boondocks Bourbon, optional (if you want to make it alcoholic)
Grill peach just long enough to soften and get grill marks.
Meanwhile mix honey and thyme with hot water and let sit for five to seven minutes to extract flavor.
When the peach is ready, add to cocktail shaker with infused thyme water, lemon juice, and bourbon (if using). Muddle with a large spoon, then add ginger beer and shake (gently, because the ginger beer is fizzy and will build pressure in the cocktail shaker).
