My daughter asked for potato kugel and shepherd’s pie for supper…..so this recipe was born!
8 potatoes
2 medium onions
6 eggs
1/2 cup boiling water
1/2 cup oil
1 heaping tsp. salt
generous shake of pepper
1-1/2 lb. chopped meat
1 onion chopped
1 T soy sauce
shake of pepper
Grate potatoes and onion, transfer to bowl, add boiling water and remaining ingredients. Mix well. Pour half of batter into 9×13 pan.
Mix together all meat mixture ingredients. Crumble meat mixture over potatoes.
Add remaining potatoes. Drizzle top with additional oil.
Bake at 375 F for 1-1/2 to 2 hours.
