Ground Vanilla Bean Noodle Kugel

I liked the aroma of regular ground vanilla rather than the Madagascar variety for this recipe, but you could use either one with terrific results!

Prepare the Kugel

  1. Preheat oven to 350 degrees Fahrenheit. Spray a 9- x 13-inch casserole dish with non-stick vegetable spray. Set aside.

  2. Bring a large pot of water to a boil. Add the noodles, reduce the heat to medium, and cook for seven minutes. Drain the noodles and return to the pot. Do not rinse the noodles.

  3. Add the cream cheese to the warm noodles and stir until well blended. Add the eggs, sugar, canola oil, and ground vanilla bean. Stir until well mixed.

  4. Add the raisins and stir until evenly distributed. Pour the noodles into the casserole dish.

  5. Evenly sprinkle the golden vanilla cane sugar over the top of the noodles.

  6. Bake for 30 minutes until golden brown.
