Hamantashen Crackers

Ingredients

Crackers

  • 1/2 cup chia seeds

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/2 cup flax meal

  • 1/2 cup oats (gluten-free, if needed)

  • 1/2 cup hemp seeds

  • 1 and 1/2 cups filtered water

  • 1 tablespoon kosher salt

Topping

  • 1/2 cup melted chocolate, in a piping bag

  • caramel, optional

  • jam, optional

  • vanilla cream, optional

Directions

Prepare the Hamantaschen Crackers

1.

Preheat oven at 350 degrees Fahrenheit.

Combine all the dry ingredients in a bowl. Add the water.

3.

Mix well and let sit for 10 minutes until the water is incorporated.

4.

With a spoon or a spatula, press the mixture into a baking pan covered with parchment paper.

5.

Bake for 30 minutes. Cut triangles with a sharp knife and flip onto the other side.

6.

Bake again for 30 minutes until edges are golden.

7.

Let cool for 15 minutes.

8.

Drizzle the melted chocolate on top.

9.

Store in a jar or container for up to one week on the counter or one month in the freezer (if they last that long!).
