Ingredients

Tiki Skewers

  • 2 pounds cubed dark chicken threaded on skewers (mini is super cute too!)

  • 2 pounds high-quality marbleized beef cubes threaded on skewers

  • salt

  • pepper

Hawaiian Pineapple BBQ Sauce

  • 1 tablespoon sriracha or favorite hot sauce

  • salt, to taste

  • pepper, to taste

  • 1 tablespoon cornstarch diluted in 3 tablespoons water (for Passover, use potato starch)

Pineapple Salsa

  • 2 cups tiny diced pineapple (you can also use mango or persimmon)

  • 2 cups diced cherry tomato

  • 1/2 cup cilantro leaves, washed and chopped

  • 1 jalapeno, seeded and minced

  • 2 tablespoons Gefen Olive Oil

Directions

Prepare the Skewers

1.

Preheat oven to 400 degrees Fahrenheit.

2.

Place all ingredients for sauce in a small saucepan and bring to a simmer for five minutes. Once a low boil is reached, whisk in the cornstarch to thicken. Remove from heat.

3.

On two separate lined cookie sheets, place skewers and season lightly with salt and pepper.

4.

Brush skewers lightly with sauce and roast or grill until desired doneness.

5.

Serve with pineapple salsa, rice, lime wedges, and keep drizzling with fingerlicking sauce!

Prepare the Pineapple Salsa

1.

Combine all ingredients in a medium bowl and stir gently. Let marinate until ready to serve!

Notes:

For a beautiful presentation, slice a whole pineapple down its length, reserving the leafy top. Core out one side to create a bowl to fill with salsa!
