These muffins are incredibly quick and easy to prepare. My kids were thrilled to try them, and by the time I returned, they had finished every last one — leaving none for a picture! You can easily make them yourself as well!
2 and 1/2 cups old-fashioned oats
1 cup unsweetened applesauce
3/4 cup almond or oat milk
1/3 cup xylitol (or honey)
2 eggs
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
First preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Then mix old-fashioned oats, unsweetened applesauce, almond or oat milk, xylitol (or honey), eggs, baking powder, baking soda, cinnamon, and salt in a mixing bowl, combining everything thoroughly.
Once it’s all perfectly smooth, pour the batter into lined muffin pans. Have fun garnishing your muffins with sugar-free chocolate chips, slivered almonds, or sugar-free dried cranberries.
Slide the pans into the oven and bake for 30 minutes, or until the muffins are golden brown. Enjoy!
