Diets Since fall has started, any time I crave something warm, hearty, healthy, and flavorful, this dish has become my go-to. Beware this bowl will make you want to curl up in a cozy sweater! Feel free to add in any veggies or proteins you want!
Glicks Cooking Spray or other oil spray, for sautéing
1 sweet potato, cubed
water
1 green pepper, julienned
1 red onion, julienned
1–2 cloves garlic, minced or 1–2 cubes Gefen Frozen Garlic
seasoning of your choice (I used rosemary, some pepper and seasoned salt)
Lightly spray a pan with some oil of choice, and sauté the sweet potato.
Add a few tablespoons of water and cover the pan to let the sweet potatoes soften. Keep adding a few tablespoons of water every few minutes until they have softened.
Add pepper, onion and garlic. Season with your spices of choice. Continue to sauté until the vegetables have softened. Enjoy!
