3 Tbsp olive oil
1 large onion diced
3 large shallots diced
4 garlic cloves crushed
1 sweet potato peeled and diced
1 Japanese yam “ “
1 Yukon gold potato “ “
1 small butternut squash “ “
1 parsnip “ “
1 bay leaf
2 Tbsp salt
1 tspn dried thyme leaves
1/2 tspn dried basil
1/2 tspn black pepper
6 cups water
2 cups tomato juice
spice bag filled with 1/2 cup fresh parsley and 1/2 cup fresh dill
in an 8 quart pot over medium heat, heat oil. add onions and shallots and sauté for 10 min. stir occasionally until softened. add garlic and sauté 1 more min.
add remaining veggies, seasoning, water, tomato juice, herbs
bring soup to boil. reduce heat and simmer for an hour. remove bay leaf and spice bag before serving
